Lundin on the Range

Some days we eat a single meal betwixt noon and night, and we name it lundin.  This little peculiarity appeals largely to the cook (*raising hand*), as she escapes an entire meal prep for the day.  [Not like she's slaving over a stove thrice daily, because she usually absents herself from the straggledy breakfast scenes in the first place, but lunch and dinner normally do require some measure of attention.]

All snowy behind the ears again on the plains, Charles left to pick up Son3 from work mid-afternoon, and Son4 and the little woman determined to set a prairie table for the meal. 

As Son3 and Dad closed the door against the blustering winds and snow, they were greeted with a serenade of Home on the Range and a piping hot repast (round steak baked in wine and mushroom soup, smashed potatoes, vegetables, apple cobbler) from oven and range.  Sometimes ya just gotta make your own entertainment out o' nothin' (or outta food) on a snowy-blowy day.  And it just ain't all that bad.

Willow, been slayin' dragons here, and Son3 even posted your comment for me. This is the first I've seen of it. Ü Our Pierre has never howled. That's something I'd like to hear. I can imagine, though, your Scottie and ScottieSortaNot sending out a song. Too cute.

I dredged the steaks in seasoned flour, quickly browned in olive oil, and plopped into a 9 x 13 with a layer of sliced onions on the bottom. Poured in some white wine and water, emptied a can of mushroom soup atop the steaks, sealed with foil, and baked something like an hour-and-a-half. It was an "I think I'll..." which turned out swell. Not all of my I-think-I'll endeavors do! *L & batting eyes*
