No-Cal Cupcakes


Poor Charles walked upon the scene when I was decorating nearly 3 dozen of these things.  He stood watching for a few moments, then said, "Oh, they're snowmen, aren't they?  I thought you were trying to make clocks and having a really hard time of it."  In his defense, a plateful, turned every which way but upside-down, was a dizzying spectacle.  Who, though, would want a clockface cupcake?  The president of Timex?  This, my friends, is a snowman cupcake — deftly fitted to our current, frigid, snowbound environment.  Really tasty, too: chocolate fudge cake with icing made of butter, coconut oil, and powdered sugar.  Who wouldn't?

Calories in a snowman head?  Uh, wouldn't that be zero?

They're all gone now.  You reckon they melted?  Hey, not in my mouth ... well, not all of 'em.  There are three other people to feed: one for Charles, one for me; one for Son3, one for me; one for Son4, one for me....

You eaten any snowmen lately?  They're tasty!

Willow, it's just a box cake and buttercream frosting, and I toss to make my frosting: stick o' butter, 1/2 cup coconut oil, probably about 5 or 6 cups powdered sugar, clear vanilla extract, almond extract, and splashes of milk (while I'm beating and beating) until it's spreading consistency. Of course that would frost more than 3 dozen cupcakes, but I had a cake to do the next day, so I used more than these measures anyway.

I did, indeed, call Zoomer when Charles saw the earthquake in the Fox scroll (he still watches) last night. ;o) She's in trouble for not answering by the 3rd ring after an earthquake, and I'm in trouble for making her unload her laptop and a bowl of soup, so she could go get her phone. *snort* Even as far inland as they are, she said they got jostled on their mountain for a long time, and Soda was barking, but all is well. Mr. Zoomer has a friend very near Eureka, and he literally took to the hills, when the tsunami warning sounded. All's well on that account, too. Ü

Does snow ice cream count for having eaten snowmen? Had some with Vanilla Caramel Brownie coffee creamer in it...YUMMMM!! One of those cute little snowman cupcakes would have been a great pairing with the snow ice cream!! :)
